Casein phosphopeptides (CPP) will be tested as mineral carriers, since according to Skibsted 2016, the CPP exhibit capacity to bind cations like iron and calcium through the negative charges of their structure, preventing their interaction with elements from the matrix that can cause the precipitation of minerals, in addition to favouring paracellular absorption. Thus, the combination of iron and calcium supplements with CPP would increase their bioavailability, so that the nutritional supplements would become more effective. Furthermore, a biscuit will be used as vehicle to convey the CPP-mineral combination taking into account that it is an attractive food and widely consumed by population. During the development of fortified biscuits sensory, technological and reological characteristics as well as the bioaccesibility of iron and calcium by means of in vitro tests of gastrointestinal digestions will be evaluated to determine the most suitable formulation. The selected formulas will be produced on a larger scale in the company Biscuits Galicia and finally, sensory analyses and stability studies during the storage will be performed.
